Chai-Spiced Millet Porridge
Ingredients
For 2 large servings or 4 small servings
- 1 tsp. avocado oil
- 1/2 cup uncooked millet, rinsed and drained
- 1.5 cups almond or nut-free milk
- 1/2 cup canned organic coconut milk
- 2 tbsp. Nuzest Clean Lean Smooth Vanilla Protein Powder
- 3 tbsp. Lakanto Golden Sugar-Free Monk Fruit Sweetener (option to substitute date or coconut sugar)
- 1 tsp. pure vanilla extract
- 1 tsp. Cylon Cinnamon
- 1/2 tsp. ground cardamom
- 1/4 tsp. sea salt
- Pinch nutmeg
- 1/2 to 1 cup raisins or chopped dried fruit (optional)
Toppings
- Dried fruit
- Fresh fruit
- 1 Peanut Butter & Jelly G2G Bar
Directions
- With Instant Pot on saute setting, add oil and millet and saute for 4 to 6 minutes until millet is golden brown and has a nutty aroma.
- Turn Instant Pot off and add almond milk, coconut milk, protein powder, sweetener, vanilla, cinnamon, cardamom, salt, and nutmeg.
- Close and lock lid.
- Pressure cook on high for 15 minutes, followed by a natural pressure release.
- Once pressure is released, open lid carefully. Stir in raisins or diced dried fruit as desired and serve warm with a chopped up PB&J G2G Bar and your other favorite toppings.
