Strawberry Cheat-Cake
Ingredients
Base
- 1/2 cup low-fat cottage cheese
- 1-2 tbs. sugar free cheesecake pudding mix
- 1 tsp. vanilla protein powder (optional)
- 1/2 Almond Coconut G2G Bar
Toppings
- Fresh fruit
- 1 Almond Coconut G2G Bar
Directions
- For the base, grab an Almond Coconut G2G Bar and flatten it and shape it into a crust. If it was stored in the fridge microwave for 10 seconds to soften it up.
- For the topping, start with either low-fat cottage cheese or plain Greek yogurt blended until smooth (or a mixture of both). I use about 1/2 for this size and had a little left over.
- Sprinkle in sugar free cheesecake pudding mix (about 1-2 Tbs). Tip: start slowly and stir well to avoid clumping. If clumping happens use a splash of almond milk.
- Optional: sprinkle a little bit of vanilla protein for flavor and to thicken. If anything is gritty use a splash of almond milk. This can also be used in exchange for the pudding mix, but be aware the pudding mix is what gives you the cheesecake flavor.
- Add fresh fruit and any crumbs you can find, and you will feel like you are sitting down with a treat fit for a queen.
